As a trained winemaker, Florian Faude has the opportunity to purchase first-class grape marc from renowned vineyards in Baden: “I prefer marc from Spätburgunder (Pinot Noir). Classic fermentation on the skins lends it more aroma and fullness, but requires a longer maturing period. Our Weintresterbrand takes its colour and characteristic aromas from barrel aging in old red wine barrels. The process preserves its fruitiness, while the wood flavours subtly round out its character.”
